Hey guys! Happy almost Cinco de Mayo! As I do every year*, I've gotchu with a brand new skinny margarita! These Coconut-Lime Margaritas are actually my first non-frozen margaritas on the blog and I'm obsessed with them!
They've super creamy and the coconut-lime flavor gives such a tropical vibe! This one is going to be amazing all year long, but extra refreshing in the summer! I'm so pumped to have them with my Chipotle Fish Tacos with Mango Salsa and Garlic-Cilantro Cauliflower Rice on Wednesday for Cinco de Mayo - such a perfect pairing.
And aren't they're so pretty?! I actually think they'd make a gorg Christmas cocktail with all of their snowy-gloriousness.
Off-topic, as some of you may know, Cinco de Mayo also marks my blogiversary! The Foodie and The Fix will be 6 years old this year, it's crazy!

Ok, let's do a little Q&A and then I'll show you how to make this easy Skinny Coconut Margarita!
What's a skinny margarita?
Just a lightened-up margarita! With this recipe, I lightened it up by using less sugar and canned coconut milk instead of processed cream of coconut (like Coco Lopez) like most restaurants (and many regular recipes) would use.
This particular Skinny Coconut-Lime Margarita is also vegan, gluten-free, dairy-free, 21 Day Fix approved and Weight Watchers friendly! You can find the 21 Day Fix counts and the Weight Watchers points in the recipe card 🙂
What's in a coconut-lime margarita?
There are a million different variations on this, but usually Pre-made cream of coconut, tequila, lime juice, and triple sec.
This 21 Day Fix Coconut-Lime Margarita uses tequila, unsweetened coconut milk, lime juice and simple syrup. I love that I never have to pick up anything special for it!
Which tequila is best for margaritas?
Let me wax on about tequila for a minute...
How to choose a tequila for a margarita:
The most important thing about picking a tequila is that it's made from 100% agave. It's usually printed right on the label and if not, give it a google and see what you find - most likely if it's not on the label, it isn't. Let me also note that you're looking for a blanco for this recipe (and most margarita recipes), which may also be called a silver or plata tequila.
My top tequila recommendation for this Skinny Coconut-Lime Margarita:
My very favorite and top recommendation is Olmeca Altos Plata tequila. The minute you open it and take a whiff, you think, "holy crap that smells like the best margarita ever"! It's kind of insane.
A quick review of the Casamigos Blanco that is pictured here:
This was the first time I've ever tried the Casamigos and it. is. amazing. It's such a deliciously complex tequila, it's a little smokey, there's a little vanilla in there. It's so good. It's an incredible sipper if that's your thing, and would make a delish tequila old-fashioned as well!
While the Casamigos was really good in this Skinny Coconut-Lime Margarita, I still prefer my old standby of the Olmeca Altos in it. I felt like the complexity of the Casamigos was a bit lost amongst the flavors of this marg and I just kept thinking that I wanted something more straightforward for this recipe. The complexity of the Casamigos sort of softened the tequila flavor for me, and that's what I really want to be getting when I'm drinking a margarita.
It's a pricier tequila (you guys, I got it for $15 off and was so pumped!), and I honestly think it was just too schmancy for a marg, but that could just be me!

tl;dr: Olmeca Altos Plata is my fave, but if you grab any 100% agave tequila that's a decent price, you really can't go wrong!
How to make a Skinny Coconut-Lime Margarita:
Rim your glass by wetting half or all of the rim with a lime wedge, then pressing the wetted area into the shredded coconut mixture.
Add the lime juice, coconut milk, tequila and simple syrup to a cocktail shaker. Add ice and shake until cold.
Double-strain into your prepared glass...

Skinny Coconut-Lime Margarita
This Lighter Coconut-Lime Margarita is sweet and refreshing and pairs perfectly with all of your favorite Mexican recipes!
Ingredients
Coconut Rim (this will make enough for a few drinks):
- 1 Tbs unsweetened shredded coconut (I like to use Bob's Red Mill's because they're smaller pieces and stick to the glass easier)
- 1 teaspoon sugar
- a pinch of salt
- lime wedge or a little lime juice for wetting the glass
Coconut-Lime Margarita
- 1 ½ oz blanco tequila
- 1 oz full-fat coconut milk (light coconut milk for WW peeps!)
- ¾ oz simple syrup*
- ¾ oz fresh lime juice
Instructions
Rim your glass:
Mix together all of the coconut rim ingredients, then pile the mixture on a small plate. Wet about half of your glass with the lime juice (or you can do the whole thing if you prefer), then roll the wetted area into the coconut mixture until coated. Set aside.
To make the Coconut-Lime Margarita:
Add all of the margarita ingredients to a cocktail shaker, then add ice. I usually add around 4-5 standard-sized ice cubes. Then shake it for 10-20 seconds or until the shaker feels very cold. Double strain (strain through a fine-mesh strainer or cocktail strainer) into your prepared glass and enjoy!
Notes
*To make simple syrup, put equal parts sugar and water in a small pot and heat just until the sugar dissolves. Remove from heat and refrigerate until ready to use - this will last in the fridge for a good couple of months!
