Hey guys! Happy almost September! While just thinking the word "September" conjures cozy visions of orange-colored leaves, buffalo plaid and pumpkin spice lattes, I'm trying desperately to ignore that for just a little longer while I eek out this last bit of summer while I can!
In that vein, I wanted to stretch out the season by sharing with you one of our family's favorite summery fish tacos (that we happily eat all year long) - these Chipotle Fish Tacos with Mango Salsa 🙂
I was in a Facebook group the other day where a member posted a photo of her taco dinner which was captioned "Our homemade tacos with an absurd amount of toppings!" I then replied, "an absurd amount of toppings is the only way to have tacos" and you know what? That's the damn truth.
And speaking of toppings, these yum tacos are stuffed with all of the right goodies, if you ask me! Perfectly seasoned fish, lime-y slaw, sweet mango salsa and a deliciously smokey chipotle mayo (with just the right amount of heat)! They're seriously heaven on a tortilla and I can't freaking wait for you to try them.
Without further ado, I'll answer a few questions you might have and then I'll show you how to make 'em! (Spoiler: they're insanely easy!)
Q&A:
What kind of fish should be used to make fish tacos?
Pretty much any kind of whitefish that you like will work well in a fish taco. Cod, halibut, mahi-mahi, etc.. We've also made these using shrimp and they were delish that way, too! Personally I preferred the fish (we usually make it with cod just because it's inexpensive here), but my husband prefers them with shrimp, so maybe give them both a try and see what you think!
How do you season fish for fish tacos?
I love seasoning any kind of protein for tacos with this Smokey Southwestern Seasoning! It's my very favorite taco seasoning as you may have noticed if you've made my Salmon Tacos, Pulled Pork Tacos, or Instant Pot Turkey Taco Meat 🙂
Are these Chipotle Fish Tacos with Mango Salsa kid-friendly?
Absolutely! My oldest (who is 12) loves them just as they are, and we just leave off the chipotle mayo on my youngest's. Sometimes she'll even just have the fish taco with a little cheddar cheese and some greek yogurt - it's nice that the fish is super versatile toppings-wise.
Can these Air Fryer fish tacos be made ahead?
Yes! I love to make all of the components ahead and refrigerate them separately until needed. I just char the tortillas right before serving.
How long will the components for these fish tacos last in the fridge?
I would say that they'll last a good 4-5 days. I love these for meal prep and leftovers!
Are fish tacos healthy?
That depends. If you get them in a restaurant and the fish is deep-fried and everything is smothered in mayo-based sauce, probably not. These ones definitely are! Made with delicious, fresh ingredients, the perfect amount of that delish chipotle mayo and no deep fryer in sight!

Can these be made without cilantro?
For sure! I know some of you beautiful people are cilantro haters, and while I don't understand it, I do respect it. 😉 Go ahead and just make these without, they'll still be crazy good.
How do I make chipotle puree?
You guys. I LOVE chipotle puree. It's amazing to add to tacos, chili, or anything you want to add a smokey, spicy kick to! Even margaritas! The best part is that it takes about 30 seconds to make, makes plenty so you won't have to make more for a LONG time and keeps super well.
Instructions: Put an entire can of chipotle in adobo (including the adobo sauce) into a small food processor and process until smooth. Dats it.
How long does chipotle puree last?
Chipotle puree will keep in the refrigerator for up to two months. You can also freeze it by putting it in a small freezer bag, then you can just cut off the portion that you need when you need it. Frozen it'll last at least 6 months, but I've definitely used it longer than that and it was still perfect.
How can you tell if a mango is ripe?
You can tell if a mango is ripe by giving it a gentle squeeze. Completely ignore any coloring. If it's super hard, it's not ripe. If it has a little give (sort of like an avocado) it's ready! You can ignore the coloring on the skin, more red coloring on the outside doesn't mean it's more ripe.
The mango I used for these photos wasn't quite as ripe as I would've liked, but honestly, it was still delicious!
If you can't get your hands on fresh mangoes, thawed, frozen mango will work pretty well in this recipe also.
What sides should I serve with these 21 Day Fix fish tacos?

What is the best way to heat corn tortillas for tacos?
You can do this any way you like, but I love to heat up my corn tortillas in a hot pan to cook and char them a bit, it really makes a huge difference! I just give each side of the tortilla a quick spray of olive oil, char them in the pan on each side and then I fold them lightly in half on a paper towel to let them set a few seconds to help them keep their shape.

How to Make Healthy Fish Tacos:
Squeeze the lime juice over the slaw mix and give it a stir. Set slaw aside.
Cut your mango into chunks by slicing off the "cheeks", scoring them and then cutting off the chunks.
Stir together the mango, cilantro, onion and vinegar for the salsa.
Stir together the yogurt, chipotle puree and mayo for the sauce.
Season your fish with this yum Smokey Southwestern Seasoning and place in your air fryer basket (if air frying - see recipe card for other methods). Cook until opaque and flakes easily with a fork, 8-12 minutes depending on thickness.
Assemble! To your prepared tortillas, add your fish...
Then the lime slaw...
Then the mango salsa...
Last but not least, top with the chipotle mayo and sprinkle with cilantro and an extra squeeze of lime if ya like!

Chipotle Fish Tacos with Mango Salsa
These flavorful air fryer fish tacos are stuffed with the most delicious toppings that'll make the whole family happy!
Ingredients
Slaw:
- 1 ½ cups shredded cabbage or coleslaw mix
- ½ lime, juiced
Mango Salsa:
- 2 cups finely diced ripe mango (can use fresh, pre-cut or frozen and thawed)
- ½ cup finely minced red onion
- ¼ cup cilantro, chopped
- 1 ½ Tbs apple cider vinegar
Chipotle Cream:
- ¼ cup mayonnaise
- 3 Tbs 2% plain Greek yogurt
- 1 Tbs chipotle pepper puree* (or more, to taste!)
Fish:
- 1 ½ lb white fish (halibut, cod, mahi mahi)
- Smokey Southwestern Seasoning (click here for that recipe) or low-sodium taco seasoning
Remaining Ingredients:
- 8 corn tortillas
- extra cilantro, if desired
- lime wedges, if desired
Instructions
Prep your components:
Mix the slaw ingredients together and set aside.
Mix all of the mango salsa ingredients together and set aside.
Mix all of the chipotle cream ingredients together and refrigerate while fish cooks.
Season your fish liberally with some smokey southwestern seasoning or with low-sodium taco seasoning (but I HIGHLY recommend the smokey southwestern, it's SO good!)
Air Fryer instructions for fish:
Preheat your air fryer to 390° or 400° (depending on how hot your air fryer gets). Spray air fryer basket with olive oil cooking spray, add your seasoned fish to the basket and cook at for 8-12 minutes depending on thickness. The fish in these photos took 11 minutes, for reference. When they're done they'll be opaque and easily flake with a fork.
Oven Instructions for fish:
Preheat oven to 400°. Line a baking sheet with parchment paper if you've got it, if not, give it a good spray with some olive oil cooking spray. Put your seasoned fish on your prepared baking sheet and bake for 10-15 minutes, depending on thickness or until the fish has turned opaque and easily flakes with a fork.
Stovetop Instructions for fish:
Spray a medium-large nonstick saute pan with olive oil cooking spray and heat to medium heat. Add your seasoned fish and cook for about 4-5 minutes, flip your fillets, then cook another 4-5 minutes or until the fish has turned opaque and flakes easily with a fork. Remember, you're just going to break the fish up for your tacos, so no big deal if your flipping isn't pretty! This is a low-stress dish!
Heat your tortillas:
You can do this any way you like, but I love to heat up my corn tortillas in a hot pan to cook and char them a bit, it really makes a huge difference! I just give each side of the tortilla a quick spray of olive oil, char them in the pan on each side and then I fold them lightly in half on a paper towel to let them set a few seconds to help them keep their shape.
Assembly:
To each warm tortilla, add your fish, then some slaw, then 2-3 Tbs of mango salsa, then ½ Tbs of chipotle mayo. Garnish with extra cilantro and a squeeze of lime if ya like!
Notes
*To make chipotle puree, just put the entire contents of 1 can of chipotle in adobo into a small food processor and process until smooth. This will keep in the fridge for a couple of months and in the freezer for a good year.
