Aaahh!! You guys!! Do you know what tomorrow is?? I know what you're thinking and you're half right: tomorrow is Cinco de Mayo, the official holiday of consuming fabulous Mexican and Mexican-inspired eats (and drinks!) and listening to mariachi music. Ok, so that's not really what Cinco de Mayo is supposed to be about, but I'm pretty sure that's the way most of us think of it. But wait! There's something else... it's also my blogging anniversary! I seriously can't believe that it's been a whole year since I started writing recipes for and chatting with you guys. I'm being completely earnest when I say that this is absolutely my dream job and I just want to take a minute to thank you awesome people for trying out my recipes, reading my often overly verbose blog posts (like this one) and supporting The Foodie and The Fix in all of the wonderful ways that you do. Anyway, here's a quick true story about my very first ever blog post (which was this taco btw):
Prior to that first post, I had been preparing to start blogging for at least a month. Getting the website set up and getting a bunch of recipes, photos (terrible, terrible photos, please don't look for them - unless you're prepared to feel really sorry for me, then go right ahead) and posts ready to go. A day or two before my blog went live I had this laughably-late-in-the-game realization that it was going to post on Cinco de Mayo and felt like a complete idiot for not having something thematic to post. So I freaking scrambled like a crazy person to get those tacos up on the blog, but I did it!
I'm not going to say that scrambling like that has been my habit as a blogger... buuuut I probably also shouldn't say that it hasn't. 😉
So, THESE MARGS!! You are going to love me. I mean seriously freaking love me for this one. These adorably pink margaritas are so ridiculously delicious and crazy low in calories for a cocktail, I hardly know what to do with myself (other than make an entire pitcher and swat at people who come near it).
Most restaurant fruit margaritas of a similar size are around 350 calories. 350 calories! That's like a whole meal, people! Not this one though. This sweet and refreshing watermelon margarita has... wait for iiitt...
115 little bitty calories.
I know!!
And really, what's Cinco de Mayo without a margarita? Oh wait, I can't tell you because I have no idea and I never intend to find out.
Ok, a few little things to help you in making the most perfect frozen watermelon margarita you'll ever have:
- Get yourself a decent tequila. I used Olmeca Altos 100% Agave Plata Tequila, which I found on this fantastic list of amazing budget-friendly tequilas perfect for margaritas.
- Next, and just as important, get yourself a sweet and ripe watermelon. Here are some things to look for:
- It should feel heavy for it's size.
- It's skin should be dull and not shiny.
- It should be pretty uniform in shape. If there are irregular lumps and bumps, that could mean that it's sun and water intake were irregular too.
- Most important! The field spot (where it sat in the field) should be a buttery-yellow color (or at least grab the one that is the most yellow).
That's it. You're only 3 ingredients away from low-calorie watermelon margarita euphoria. What's that? You're running to the store right now?

21 Day Fix Watermelon Margarita
Ingredients
- 1 cup fresh, ripe watermelon, cut into ½" cubes and frozen (measure first, then freeze!)
- 1 Tbs fresh lime juice
- 2 Tbs blanco tequila
- ½ Tbs water (or more if needed)
Instructions
- Put all ingredients in your trusty blender and blend away until smooth. If it's a little too thick, add a little more water in ½ tablespoon increments. That's it!
