These crispy air fryer Brussels sprouts (with the easiest, most delicious lemony-mayo sauce!) make an incredible side dish or appetizer!

Ever eat something at a restaurant that you become so obsessed with that you have to figure out how to make it at home because only eating it every once in a blue moon would be an actual travesty?
That's me and these Brussels sprouts. ❤︎
You guys. I have turned Brussels sprout haters into lovers with my version of this dish.
The perfect crispiness. The most magical, creamy, lemony aioli. THE JOY.
And here's a big, beautiful bonus: making them in the air fryer makes them so much healthier than the deep-fried ones at the restaurant. A pretty big W in my book.
Alright, let's do a little Q&A and then I'll show you how to make 'em (it's honestly barely a recipe, these are so easy!).
Frequently Asked Questions
What kind of mayo should I use to make the lemony sauce?
I like to use regular ol' Hellman's because I feel like it makes the best sauce base, but whatever you've got on hand will work 🙂
Is there a substitute for the Greek yogurt?
If you have sour cream on hand (and aren't doing 21 Day Fix), you can use that instead.
If you don't have sour cream (or if you're doing 21DF / Portion Fix), you can substitute it for more mayo.
Can these Brussels sprouts be made in the oven?
Yes! I put them in at 450 degrees on a baking sheet, and they'll probably take about 25 - 30 minutes or so to really get crispy.
It does take quite a bit longer, but it's a great option if you're making a lot (or don't have an air fryer!).
Can the sauce be made ahead of time?
Yes, I make this ahead all the time. Once it's made, it'll keep in the fridge for 4-5 days.
Do air-fried Brussels sprouts keep well as leftovers?
Air-fried Brussels sprouts are best hot out of the air fryer. That being said, when I do have leftovers of them (honestly a rare occasion), I throw them back in the air fryer to heat back up and they crisp up again pretty nicely!

Are these air fryer Brussels sprouts healthy?
Everything in moderation of course (we do have a bit of mayo happening here after all), but these beauties have some great things going for them:
- They're both 21 Day Fix and Weight Watchers friendly (check the recipe card for counts!)
- They're gluten-free
- They contain healthy fat from the olive oil, and the Brussels sprouts themselves are pretty nutrient-dense and a good source of fiber

How to Make Crispy Air Fryer Brussels Sprouts with Lemony Mayo
Add the olive oil to your Brussels sprouts and stir to coat. Sprinkle the salt and pepper over them and stir again until everything is well coated.
Add the Brussels sprouts to your air fryer in a single layer (you may need to do two batches depending on the size of your air fryer) and air fry at 400° for 4 minutes, give them a shake or a stir, then pop 'em back in for another 3-5 minutes or until crispy.
While the sprouts are air-frying, whisk together all of the ingredients for the lemony mayo and refrigerate until ready to use.
Top your gorgeous crispy Brussels with this dreamy sauce, a little freshly grated romano, and some extra black pepper and enjoy!

Crispy Air Fryer Brussels Sprouts with Lemony Mayo
These Brussels sprouts cook up perfectly crispy on the outside and tender on the inside, then they're topped with the most magical lemony mayo! Great as an app or a side dish!
Ingredients
- 16 oz Brussels sprouts (4 cups, washed, dried, trimmed and halved)
- 8 teaspoon olive oil
- ½ teaspoon salt + cracked black pepper, to taste
Lemony Mayo (makes 8 Tbs)
- ⅓ cup mayonnaise
- 2 ½ Tbs plain Greek yogurt (2%)
- 1 Tbs fresh lemon juice (or more, to taste)
- a tiny pinch of salt
Optional Topping:
- 2 teaspoon grated romano cheese
- some more cracked pepper if ya like
Instructions
- Add your trimmed and halved Brussels sprouts to a large bowl and drizzle with olive oil, stirring to coat. Sprinkle your salt and pepper over them and stir again until everything is well coated.
- Add the Brussels sprouts to your air fryer in a single layer (you may need to do two batches depending on the size of your air fryer) and air fry at 400° for 4 minutes, give them a shake or a stir, then pop 'em back in for another 3-5 minutes or until crispy.
- While the Brussels sprouts are cooking, whisk together all sauce ingredients and refrigerate until ready to serve.
- Once Brussels sprouts are nice and crispy, serve immediately, with each serving getting topped with 2 Tbs of the lemony mayo, ½ teaspoon of grated romano (if using), and some extra cracked black pepper if ya like, enjoy!
