A while back I created this green apple and brussels sprout slaw specifically to go with these crazy-good apple barbecue chicken sandwiches, but I liked it so much all on its own that I decided it needed its own post.
Btw, just a note for the brussels sprouts haters out there... sshhh... I'm actually kind of with you. I can't just eat seasoned, roasted sprouts, they're SO bitter to me! They really need to have some love for me to eat them and I've also found that having them shaved in a recipe can really help with the bitterness.
Aside from this yum slaw salad, I also love them in this Cheesy Brussels and Bacon Dip, these Red Wine Vinegar & Maple Caramelized Brussels Sprouts and Onions and my friend Nancylynn's Crispy Brussels Sprouts with Bacon, Parmesan and Balsamic. You guys, this easy green apple slaw salad has the savoriness from the brussels sprouts, a bright acidity from the green apples and a sweet, tangy dressing that is all just so perfect together.

What do I do if I can't find shaved brussels sprouts at my store?
The easiest thing is to use a food processor with a slicing disc (be sure you're not using the carrot side!). I trim the ends, cut them in half lengthwise and then let my processor do all of the work. It adds a few extra minutes to the making of this dish, but it's really not bad 🙂
Can this coleslaw be frozen?
No, I wouldn't freeze this one. Really any slaw is best fresh.

Can 21 Day Fix green apple and brussels sprouts slaw be made ahead and should it be made ahead?
This is not a slaw that I like to make way ahead, mostly because the apples are at their best only for so long. To me this one is best made the day of (though it's perfectly fine to make it in the morning for dinner that evening).
Can the brussels sprouts be substituted?
I think this would still work nicely if the brussels sprouts were substituted with regular coleslaw mix if you're not into the sprouts or maybe just couldn't find them pre-shaved and want to save yourself the time of doing it yourself 🙂
How to make green apple and brussels sprouts slaw:
To a large bowl, add all of your dressing ingredients.
Give them a good whisk, then stir in the chopped apples and the shaved brussels sprouts.
That's it! Refrigerate until ready to serve and enjoy!

Green Apple and Brussels Sprout Slaw
This green apple and brussels sprout slaw is such a flavorful, delicious and healthy side dish!
Ingredients
- 3 Tbs 2% plain Greek yogurt
- 3 Tbs mayonnaise
- 2 Tbs + ¾ teaspoon apple cider vinegar
- 1 Tbs pure maple syrup
- salt and pepper to season
- 1 ½ cup packed, shaved brussels sprouts (from an 8 oz bag) - see note if you can't find pre-shaved brussels sprouts
- 1 ½ cup granny smith apples, finely chopped (about 1 large apple)
Instructions
- In a large bowl, whisk together all of the dressing ingredients. Stir in the chopped apples and shaved brussels sprouts.
- Refrigerate until ready to serve. If the dressing seems a little thick at serving time, you can stir in a little plain unsweetened almond milk at the end, but I usually don't have to 🙂

How to make your own shaved brussels sprouts:
Trim the ends from the brussels sprouts and cut in half lengthwise. Then using a food processor with a slicing disc (make sure it's on the slicing side, not the carrot side), slice 'em up!
You can also (carefully!) thinly slice them with a knife if you don't have a food processor.
