Hey guys! Hope you're all well and enjoying your summer. I'm adjusting to being back in a place where I can't just go to the ocean in a few minutes' time, and just missing the Cape SO much, but we've definitely been finding all of the other summer fun 🙂
Speaking of summer fun, I thought I'd bring you some today with this creamy and flavorful Mexican-inspired slaw that is giving me all of the summer vibes!
It's packed with fresh veggies, summer corn, black beans, cilantro and bright lime and is just so freaking yum.
I'm always looking for great veggie sides to serve alongside all of our favorite Mexican meals, and even though we often put some shredded cabbage with a little lime on top of our tacos, I still love this creamy slaw on the side!
One of the many things I love about it though, is that it's still delish with just the coleslaw mix, dressing, cilantro and lime if you don't have all of the other things on hand (or if you just prefer something simpler). It's pretty customizable which I love.
Aside from being crazy-delish next to some Chipotle Fish Tacos with Mango Salsa, these Chicken Enchiladas, or my friend Nancylynn's Instant Pot Chicken Tacos, this healthy creamy Mexican coleslaw is also perfect alongside all of your grilled faves.
I love it so much next to some grilled chicken that's been basted with my favorite barbecue sauce or with this grilled jerk chicken with pineapple salsa recipe - so good!
How to make Creamy Mexican Coleslaw:
It truly doesn't get easier, you guys. Just whisk together all of the dressing ingredients in a large bowl...
Then stir in the veggies, beans, corn and coleslaw mix (in this case I used a shredded cabbage and carrot mix, but any slaw mix you like will work fine). Then stir in as much cilantro and lime as you like!

Creamy Mexican Coleslaw Recipe
This Creamy Mexican Slaw is a fast, easy and delicious side dish that's amazing served with tacos or enchiladas!
Ingredients
Dressing:
- ¼ cup plain Greek yogurt (2%)
- ¼ cup mayonnaise
- 2 Tbs white wine vinegar (can sub with red wine vin.)
- 4 teaspoon sugar
- ¾ teaspoon ground cumin
- small sprinkle of salt and black pepper, to taste
Slaw:
- 16 oz bag of plain coleslaw mix from the produce dept.
- 1 cup chopped bell peppers (I like to do half green/half red, but you do you!)
- ½ cup corn (frozen, thawed corn works great!)
- ½ cup black beans, rinsed and well-drained
- ¼ cup red onion, finely chopped
- ¼ - ½ cup chopped cilantro (however much you like, or leave it out altogether!)
- ½ lime, juiced (about a tablespoon - or more to taste)
- optional: some finely chopped jalapeno is a fun, spicy add in!
Instructions
Whisk together all of the dressing ingredients in a large bowl. Add all of the slaw ingredients to the dressing and stir together.
Be sure to give it a taste to check the seasonings before serving - then you can add any extra salt, pepper, cumin or lime that you'd like. Enjoy!
Notes
21 Day Fix Container Counts per Serving: ¾ oil tsp, ¼ sweetener tsp, ½ Green, ⅛ Yellow (personally I'd only count the yellow if I had more than just one serving in a day, otherwise, for one serving it's a very small amount).
