It's apple-picking season, baby! This whole wheat German Apple Pancake has been one of my go-to easy-breezy weekend breakfasts for A WHILE, and I'm sorry I didn't get it to you sooner because you deserve all the good things! Better late than never, though, right??
Anyway, whether you want to call this absolute fall breakfast perfection a German Apple Pancake or an Apple Dutch Baby Pancake is really none of my business. All I know is that it is apple-y, cinnamon-y deliciousness, and the pancake part reminds me of a thick crepe in texture - it's just so good.

It's perfect for an easy breakfast-for-dinner, a holiday brunch, a breakfast-in-bed to spoil the love of your life (or your love of last night - no judgement here!), or just a regular ol' weekend breakfast. I've really got you covered with this one.

What kind of apples should you use in a German apple pancake?
I have made this dish with so many different kinds of apples, and it's turned out great every time! I love honeycrisps, but galas, fujis, even granny smiths are all so good, too! Use whatever you've got on hand and feel free to mix and match!
I don't have whole wheat pastry flour. Can I use a different kind of flour?
Sure! You can use white whole wheat flour, regular whole wheat flour, a 1:1 gluten-free flour blend (like Bob's Red Mill), or, if you're not doing 21 Day Fix, feel free to use regular ol' white flour. Lots of options!
What kind of pan is needed to make an Apple Dutch Baby Pancake?
While it's often made in a cast iron pan, I make mine in a 9x13 baking dish. I don't have a cast iron pan ( I KNOW), and since I know plenty of you out there don't either, I decided to stick with what I already had on hand, and I promise you, it's still delicious.
Is this whole wheat German apple pancake recipe healthy?
I feel good about eating this recipe, but it's up to you to decide if you do, too! I will say that it has whole grains, fresh apples, protein from the eggs, and not a crazy amount of butter or sugar (imo).

What should I serve with a piece of German Apple Pancake?
Plenty of times we eat this all by itself, but I love serving this with a side of scrambled eggs and some chicken breakfast sausage (Applegate's Chicken and Maple breakfast sausage is our fave but there are lots of good ones out there).
Oh, and my kids love topping their pancake with a dollop of CocoWhip!

How to make a whole wheat German Apple Pancake
Preheat oven to 450 degrees. Put a half stick of butter in a 9x13 baking dish and set aside. Mix together your topping ingredients and set aside.
Peel and thinly slice your apples, then stir in the lemon juice and 1 ½ Tbs of the topping mixture. Set aside.



Put your baking dish with the half stick of butter in the oven for 5 minutes to melt. Once melted, carefully add the apples to the pan and bake for 10 minutes.


Whisk together all of the batter ingredients.






When your apples are done cooking, pour the batter evenly over them. Sprinkle the topping over everything and bake for another 15 minutes.



Remove from the oven, cut into six slices and enjoy!

German Apple Pancake
This easy German Apple Pancake is a healthier version of the classic and a family-friendly breakfast winner!
Ingredients
Topping:
- 2 Tbs brown sugar (dark or light)
- 1 Tbs raw sugar (I like it for the texture, but if you don't have it just use an extra Tbs of brown sugar)
- 2 teaspoon ground cinnamon
Apples:
- ¼ cup unsalted butter (half of a stick)
- 3 large apples*, peeled and sliced (about 4 cups)
- ½ Tbs lemon juice
- 1 ½ Tbs of the topping
Batter:
- 6 eggs
- 1 cup whole wheat pastry flour**
- 1 cup plain unsweetened almond milk
- 1 Tbs brown sugar
- ¼ teaspoon salt
Instructions
- Preheat oven to 450°. Put the butter in a 9x13 baking dish, set aside.
- Mix the topping ingredients together, set aside.
- While the oven is heating, put the ½ Tbs of lemon juice in a large bowl. Peel and thinly slice the apples, adding them to the bowl and stirring to coat as you add the apples to prevent browning. Stir in 1 ½ Tbs of the topping. Set aside.
- Once the oven is heated, put the baking dish with the butter in the oven for 5 minutes to melt the butter.
- Remove the pan from the oven. If the butter hasn't melted all the way, give it a little stir with a fork until it's at least mostly melted. Carefully add the apples evenly to the pan, then put the pan back in the oven for 10 minutes.
- Meanwhile, put all of the batter ingredients in a large bowl and whisk together until mostly smooth (it's ok to have some small lumps).
- Once the 10 minutes are up, remove the pan from the oven again, and working quickly, pour the batter evenly over the apples, then sprinkle the remaining topping over everything. Put back in the oven to bake for 15 more minutes.
- Cut into 6 slices and enjoy!
Notes
*I like to use honeycrisp apples for this recipe, but I've tried it with many different kinds of apples and it's always turned out great. So feel free to use whatever apples you like, or go nuts and use more than one kind!
**Don't have whole wheat pastry flour? You can use regular whole wheat flour, white whole wheat flour, 1:1 gluten-free flour (like Bob's Red Mill), or, if you aren't doing 21 Day Fix, you can just use regular ol' All Purpose white flour!
