Happy summer, party people! And really, what tastes more summery than a fresh salad with a bright, berry-forward raspberry vinaigrette? Ok, maybe a pineapple margarita, but still, this vinaigrette is for sure pretty high on that list.
Somehow my kiddos have just two days left on the school calendar before I've got a sophomore and a 6th grader on my hands <- shit is wild, you guys.
Anyway, I'm always looking for legit salad ideas for summertime (read: not boring salad ideas - do not come at me with a chicken, ranch and grape tomato salad, I just won't stand for it) and I've always loved a salad with some kind of protein (it's great with chicken, shrimp, salmon, etc), greens, blue cheese, candied walnuts and a great raspberry vinaigrette. Gimme that big flavor, baby. ⇓⇓⇓
However, I hadn't made that particular salad at home before because I'd never made raspberry vinaigrette before and when I would find myself thinking of it, I of course wouldn't happen to have raspberries on hand.
You guys, this is now officially a dressing on rotation at our house - it's right up there with this honey mustard, this maple-balsamic, this creamy greek, and this chili-lime - so good!!

Raspberry Vinaigrette Recipe
An easy and fresh Raspberry Vinaigrette recipe for summer!
Ingredients
- ¾ cup (about 3 ¾ oz) fresh raspberries
- 1 ½ Tbs red wine vinegar
- 1 Tbs extra virgin olive oil
- 2-3 teaspoon of honey
- ⅛ teaspoon salt
- black pepper, to taste
Instructions
- In a small food processor, add all of your ingredients (starting with 2 teaspoons of the honey) and process for a few seconds until smooth.
- Give it a taste, and add a little extra honey and/or salt/pepper if necessary.
- Strain through a fine mesh strainer if you prefer this to be seedless and enjoy!
