However, I've been wanting to test a bigger batch that you guys (and I) could take to parties and I tried out some other methods while I was at it (because no one in this house is complaining about an abundance of spinach and artichoke dip).

Honestly, this big batch just didn't turn out as well in the oven as my Spinach and Artichoke dip recipe for one did. The dairy tended to separate a bit, so if I were you, I stick to either the microwave or the Instant Pot for this one!
Is this easy Spinach and Artichoke Dip healthy?
Yes! I made this Spinach and Artichoke dip without cream cheese or alfredo sauce (did you know that restaurants use alfredo sauce?!), instead using a mixture of cottage cheese and Greek yogurt to make this super creamy and delish but a whole lot lighter! Not to mention the added benefit of a TON of protein.

Does this healthy Spinach and Artichoke Dip recipe taste like cottage cheese?
Not at all! When cottage cheese and greek yogurt are blended together they make cream-cheesy deliciousness! I've even used it to make this brownie-bottomed cheesecake and this "cream cheese" frosting 🙂
What to dip into this quick Spinach and Artichoke Dip Recipe?
- Tortilla chips (here's a great post on how to make your own tortilla chips in the oven!)
- Bell peppers or other veggies - I LOVE using bell peppers for this.
- Whole grain crackers
Can this recipe be made ahead?
Sometimes it can get watery, so what I like to do is prep everything ahead, putting the blended mixture in one container and the remaining ingredients in another and then mix it all together right before cooking.
Can I leave this on warm in my Instant Pot for a party?
Yes, with the lid off. If you need to put the lid on, I'd turn off the warming function, it'll still stay warm. If it gets to hot, the mixture will start to separate and it'll get watery.
Is Spinach and Artichoke Dip gluten-free?

Yep!
How long will this Quick Spinach and Artichoke Dip recipe last in the fridge?
About 4 days. Just FYI, I find that when it's made in the microwave vs. the Instant Pot, it keeps better.
Can this be made in a crockpot?
Well, it wouldn't be quick anymore, but I definitely think that you could fully prepare it the way the recipe instructs, put it in a slow cooker and cook it on high for about an hour, or on low for around 3 hours or until hot.
Can I still make this if I only have 1 box of frozen spinach?
Yep! The photo about was made with only one box and it was still delish! Also the counts for 21 Day Fix end up being about the same (either way each serving rounds to ½ Green) and the WW points remain the same also.
Will this Quick Spinach and Artichoke Dip feed a crowd?
Yes! I set this up with half cup servings, which will feed 10 people. But if you're at a party that has a bunch of other appetizers as well, I think it could easily feed up to 15!

How to make Spinach and Artichoke Dip in the Instant Pot or the microwave:

Quick Spinach and Artichoke Dip {Instant Pot | Microwave}
This easy and healthy Spinach and Artichoke Dip comes together in minutes and can be made in the Instant Pot or the microwave! It's the perfect last-minute appetizer!
Ingredients
- 1 (24 oz) container 2% cottage cheese (about 3 cups)
- ¾ cup 2% plain Greek yogurt
- 3 Tbs mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¼ teaspoon salt
- ⅜ teaspoon black pepper
- 20 oz (2 - 10 oz boxes) frozen chopped spinach, thawed and squeezed dry in a clean kitchen towel (you want to get as much water out as possible)
- 1 (15 oz) can of artichoke hearts in water, drained and chopped
- ⅔ cup grated pecorino or romano cheese, grated on the small side of a box grater
- ⅓ cup shredded mozzarella cheese
Instructions
Instant Pot Instructions:
- You'll need a 2-quart casserole dish (see below for the one I use) that will fit in your Instant Pot (I tested this in a 6 quart). Either make a sling out of foil or use a silicone sling to be able to easily remove your dish when it's finished cooking.
- In a blender, blend together the cottage cheese, Greek yogurt, mayo, garlic powder, onion powder, salt and black pepper until completely smooth.
- Add the blended mixture and all of the remaining ingredients (spinach, artichokes, cheeses) to your casserole dish and stir well until fully combined, then cover tightly with foil.
- Add 1 cup of water to your Instant Pot liner. Set your dish on top of your sling, then put them in your Instant Pot liner and set to manual for 9 minutes. When it's finished cooking, you can immediately release the pressure and serve!
Microwave Instructions:
- In a blender, blend together the cottage cheese, Greek yogurt, mayo, garlic powder, onion powder, salt and black pepper until completely smooth.
- Add the blended mixture and all of the remaining ingredients (spinach, artichokes, cheeses) to a 2-quart baking dish (like a square glass pan) and stir well until fully combined.
- Microwave for 2 minutes, stir. Microwave in 1-minute increments after that, stirring in between until hot and gooey (this took 5 minutes total in my microwave, but each microwave is different). It's important to do the 1-minute increments because you don't want to overheat or it can separate. Serve!
Notes
21 Day Fix Container Counts per serving: ½ Red, ⅓ Green, ⅓ Blue, 1 teaspoon (don't forget to count whatever you dip into it!)
Weight Watchers Freestyle Points: 3 (don't forget to count the points for whatever you dip into it!)

I just made this in the microwave, and it is super creamy and delicious! It truly has all the flavors of traditional spinach and artichoke dip, but with better ingredients. Hey Jillian! I know I already answered this for you on FB, but wanted to put my answer in here, in case anyone was looking for it on the blog. I think swapping out the cottage cheese for the ricotta would be fine, but the texture will likely be a little different. If you ended up trying it with the ricotta, I'd love to hear how it went!

Can I pop it under the broiler when it’s done in the instant pot to get that gooey top?

You can, but personally I prefer not doing that. Too much heat can make the dairy separate, but also, it won't make the top gooey (it should be gooey following the regular directions), it'll brown the top. Hope this helps (and sorry so late in getting back to you)!

Can I 1/2 this? I have a 7x3 pan for the IP? My sis and I love S&A dip and I am seeing her for Thanksgiving. This would be a great surprise.

Hi! It would be difficult to cut it in half in the IP without testing it for time (the time is particularly important in this recipe because if it goes to long, the mixture can start to separate and it doesn't look very pretty). I would say that if you wanted to test it beforehand I would probably start with 5 minutes or you could make it in the microwave with no testing needed. Hope that helps! 🙂
