Healthy Pulled Pork with Mustard BBQ Sauce {Instant Pot | Slow Cooker}
Ingredients
Pork:
- 1 ½ lbs pork tenderloin, trimmed
- 2 cups low-sodium chicken broth (only 1 cup needed for the slow-cooker version)
- 3-4 Tbs of Smokey Southwestern Seasoning (click here for recipe)
South Carolina-Style Mustard BBQ Sauce:
- 5 Tbs apple cider vinegar
- 3 Tbs raw sugar
- ½ cup prepared yellow mustard
- 2 Tbs tomato paste
- 1 ½ teaspoon liquid smoke
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- hot sauce, to taste
Instructions
- Mix together all of the seasoning ingredients, then sprinkle the mixture onto your pork, patting it on to help it stick.
Instant Pot:
- Press the saute button on your IP. Once it's hot, sear the pork on all sides, add the broth to the pot, close the lid and cook on the meat/stew setting for 60 minutes, letting the pressure release naturally when it's finished.
- Remove meat, shred with two forks.
- Be sure to save some of the liquid if you think you'll have leftovers! *see notes!
Slow Cooker Instructions:
- Add the chicken broth and the seasoned pork tenderloin to your slow-cooker, cook on high for 4 hours.
- When it's finished cooking, remove it from the liquid and shred with two forks.

South Carolina-Style Mustard BBQ Sauce:
- While the pork is cooking, mix together all of the ingredients for the sauce, put in a sealed container and refrigerate. It's good to let it sit for awhile and let the flavors develop, but still delish if this doesn't happen.
Serving Thoughts:
- I don't mix the sauce with the meat, but put the meat on the bun then top with sauce (and maybe some fix approved slaw, if you like - I like!) and then the top bun. Would also be great in lettuce cups, pita bread or scooped into your mouth with your bare freaking hands.
Notes
*You can mix the sauce with the meat if you like, but I prefer to top it with the sauce, it really lets the flavor of the pork AND the sauce come through.
**If you think you'll have leftovers, save some of the cooking liquid to mix into the meat to keep it moist in the fridge.

If I have a 3 lb. tenderloin, should I adjust the time needed to cook? Thanks!

Hi! So I've never seen a tenderloin that was 3 pounds, so my guess is that either you have a pork loin or there are two tenderloins in your package and that's totaling 3 pounds (they're often packaged that way and it's hard to tell on the outside if there's one or two in there). If you have two tenderloins, then no need to adjust anything. If you have a 3 lb pork loin, I would cut it into 4 equal pieces before continuing with the recipe as written 🙂 Hope that helps!

The mustard flavor definitely comes through, it tastes very different from a tomato-based bbq sauce, but I like this one better (especially on pulled pork) personally. I hope you give it a shot! Hot sauce is fine on the 21 Day Fix (I'd just keep an eye on the sodium, it can vary greatly in different brands). I also have this tomato-based BBQ sauce that you might like. Sorry for the late response, I've been on vacation and just got back!

Absolutely delish! The Mustard BBQ Sauce is inspired! I plan to make this again and again! I also made the Creamy Coleslaw recipe, and it rocked! I rounded out the meal with a baked potato in place of a bun. Even my husband was happy!
