Hey guys! So Halloween is in just a few days!! I'm SO excited! We've basically bought all the candy ever made (as we have been warned multiple times that our new home is on the "it" Halloween trick-or-treating street). I definitely don't want any kiddos disappointed because we ran out (or, ya know, to egg our house or anything 😉 ) We're also working on putting the finishing touches on the girl's costumes - and by that I mean deciding on makeup and such, because I so did not make their costumes. Yeeeah, nope. I'm not that mom. #sorrygirls
We've definitely had a busy week and have another busy week ahead, with lots of fun Halloween activities, a birthday party, family night at the Sea Life Center and the general getting-ready-for-the-big-day antics. Something that I love to do when we've got a lot going on is make my lunches ahead. I mean, if you've been reading along for a little while, you already know this about me, the girl's a planner. 😉
That's one of the things that I LOVE about these sandwiches. I made a ton of them ahead this week, wrapped 'em up, threw them in the fridge and then we could just grab one at times when only a sammie could save the day... like a quick lunch or on our way to soccer practice. I even had one for dinner the other day because I was doing lots of blogger-y stuff and kind of forgot to stop and make dinner... oops!
Back in the day, I used to make sandwiches with so many things that just don't fit into my lifestyle anymore - things like: creamy salad dressing spread, American singles*, store-bought ketchup, and (gasp!) white bread. I know. Freaking white bread, man.
But hey, that's all in the past. It's been almost two years now since I made the decision to stop putting things in my body that had ingredients I couldn't pronounce and start eating real, whole foods and there's no going back for me. That was when I started buying Sargento's always 100% real, never-processed, natural cheese. I was super excited that they wanted to team up with me for this post, because I legit eat Sargento cheese every. single. day. No joke. This girl likes the cheese, what can I say? Hey, don't judge me. I totally saw you throw an extra fistful of cheese on that salad yesterday. Oh yeah. I know aaaaall about you. 😉
Let's get down to the flavahs in this sandwich, because O.M.G. are you guys going to love this one. First off, my Pumpkin-Goat Cheese Spread. When I came up with this a few weeks ago, I instantly knew it would be so awesome on a sandwich and it IS. It's rich and slightly sweet which pairs so perfectly with those gorgeous tart cranberries. Then (as if that wasn't enough fall fantasticness) rip up a little bit of fresh sage to sprinkle on top, add some thick-cut low-sodium turkey and some slightly smoky provolone cheese and you've got yourself one heck of a sandwich. Btw, this would be great with some leftover Thanksgiving turkey! But the best part? This makes a great grilled sandwich, too! Exhibit A ↓ - That awesome sliced-from-the-block (er, wheel?) provolone cheese gets so ooey and gooey and just freaking drool-worthy. You need this in your life. Stat.
*Fun fact: American singles are also known as "pasteurized process cheese food" (yep.) and by law only have to contain 51% actual cheese. For reals, folks.

Fully Loaded Autumn Sandwich
Ingredients
- 2 slices of good, whole grain bread (or you can make this as a wrap or a pita pocket! All great!)
- 2 ½ Tbs Pumpkin-Goat Cheese Spread, divided
- 2 Tbs chopped or sliced fresh cranberries
- 1 fresh sage leaf, torn into small pieces
- ¼ cup of watercress or whatever green ya like (baby spinach would be great!)
- 3-5 slices of low-sodium turkey (I used three because my turkey was pretty thick cut and large)
- 1 slice of Sargento 100% real provolone cheese
Instructions
- Spread half of the Pumpkin-Goat Cheese Spread on each slice of bread. On one slice, add the cranberries and the torn sage. Next add the turkey, then the cheese, then the watercress. Put the slice of bread that just had the spread on it, on top of everything else and enjoy!

We just moved into our new house a few months ago, so I'm curious to see what Halloween is like here! I'm definitely stocked up with lots of candy too (and I may have even opened the bags already...oops!). I love having sandwiches for lunch, and even dinner, so this autumn version is calling my name. I would never want to run out of candy, so I always try to ensure that I buy extra just in case....or is that I buy extra because I eat half of it before Halloween....anywho.......

I'm ALWAYS up for a good sandwich. Hubby will often even have a sandwich for dinner (with soup or something, of course 'cause girl be hungry) and this one would fit the bill perfectly. That pumpkin goat cheese spread sounds deadly. That would make any sandwich instantaneously better and copious amounts of cheese, especially grilled...gimme!! Hahahaha... that's definitely what it's like at our house, Dawn! Every year, I try to buy candy as close to Halloween as possible because otherwise it'll get eaten (mostly by my husband, who is a total candy-holic). Though I have to admit that that method has occasionally made it difficult to find candy depending on where we were living at the time. Any chance we might see some photos of the furry child all dressed up in his/her Halloween digs? I'd love that! Yes! "Bread with my cheese" hahaha, exactly! Well, hungry girl, lemme tell ya, this is one seriously satisfying sandwich! Like I have a hard time finishing it and that never happens to me ('cause this girl be hungry too 😉 ). Your Halloween activities sound like so much fun! It does not seem likely that you will run out of candy 🙂 we always buy too much candy as well but better safe than sorry ... The pumpkin goat cheese spread & provolone cheese combination sounds like a fabulous combination! Good idea to plan ahead and have some of those in the fridge also love your idea of using up leftover Turkey - will remember this for Christmas! Have a nice weekend!
