These easy whole wheat drop biscuits are a delicious and healthy addition to any brunch or breakfast!
Hey peeps! What's happenin'? Did you guys have a good Easter/spring break? Was it relaxing? Are you so freaking happy that your kids are back in school??
Not me.
I personally love when my little angels are home, loudly tormenting each other nearly every minute of every day and I've spent all our extra money on wine. It's my thing, what can I say? 😉
Truthfully though, I'm always left wishing we had a little more time while also being grateful that they're going to get some space from each other. You get me, mamas.
Speaking of mamas, these super yummy, SUPER easy, whole wheat drop biscuits would be such a perfect addition to a Mother's day brunch! You can even make them ahead, so it doesn't really get any better than that!
Honestly, these are so easy that your kiddos could even whip them up (with a little help with the oven, of course 🙂 ). My littles love helping my hubs make these and they feel so good when they get to make something for me that I ooh and ahh over. It's the sweetest.
Ok, on to the good stuff!
What is whole wheat pastry flour?
Whole wheat pastry flour is made just like regular whole wheat flour, only it's made from a different variety of wheat berry. It's made with soft wheat berries instead of the hard wheat berries that regular whole wheat flour is made with.
If you've been following me for a while, you already know that it's the only flour I bake with! It's my favorite because I get the health of whole grains, but it bakes up just like white flour! I even made all of my Christmas cookies with it this year and no one could tell. That's a mom win if ever I heard one.
Where to buy whole wheat pastry flour:
Many regular grocery stores carry it now, so I would check there first! My local Stop & Shop carries it in their organic section. Also, if you have a Christmas Tree Shops store nearby, they carry it!
If you can't find it locally, you can order on Amazon (commission link). When I lived in Alaska I had to order it, it's totally worth ordering!
How to make easy whole wheat drop biscuits:
Gratuitous ingredient shot:
Put your flour in your mixing bowl.
Then your baking powder.
And your salt.
Stir it up (I usually use a whisk, but I forgot to grab it when I was doing these photos - came out great anyway)!
Add the melted butter.
And the almond milk.
Stir some more...
Until it's combined and looks like this:
Drop by ice cream scoops onto a baking sheet and bake 'em up!
Nom nom nom nom nom.....

Hmm... I'm not sure - could your baking powder have been old?
Jetta says
Absolutely easy and delicious. Thank you for the recipe Stephanie. Is there any way to substitute some of the butter.
Thank you,
Jetta

So happy you enjoyed! I would try subbing half of the butter for some plain greek yogurt!
