Hey guys! I'm bringing you a super simple, but soooo delicious recipe that's perfect for a healthy weeknight dinner (30-minute meal right here)!
I've actually been making this one forever and I have no idea why I hadn't put it up on the blog, but I think you guys are going to love it. It's sweet, it's spicy, it's savory, it's quick, it's gluten-free, it's dairy-free, it's perfect.
The star of this show is Gilbert's Aloha Chicken Sausages. You can use other chicken sausages for this, I'm just obsessed with these and the flavor is perfect in this. Add fresh pineapple, veggies, coconut milk, curry powder, and a bit of sugar and you have an effing winner, fam.

Umm... nope. No pretending here, this is just an easy, delish recipe that I made up on the fly one day. I make it so frequently now that I knew I had to share it with you guys!
Will this recipe work for meal prep?
Yes! I make this for meal prep all the time!!
Hot tip for my 21 Day Fixers: When I slice the sausages, I make sure to cut each sausage into the same number of pieces. That way when I'm dividing my meal prep servings, I can make sure that one whole sausage goes into each.
Is Pineapple Sausage Curry healthy?
While "healthy" is always a subjective term, this dish is loaded with fresh veggies and lean protein and ends up being around 350 calories per serving. Not too shabby!
I also love that it's gluten-free and dairy-free. It's also 21 Day Fix and Weight Watchers friendly. The 21DF container counts and the WW info can be found in the recipe card!
Can this 21 Day Fix Pineapple Sausage Curry recipe be frozen?
I have never frozen this since I usually either meal prep it for the week or make one serving for myself. That being said, I think it'll freeze just fine 🙂
What kind of sausage will work for this recipe?
Ok, so I usually buy Gilbert's Aloha Chicken Sausages for this recipe because they're just so good! They're pretty easy to get your hands on (we've personally picked them up in a few different states, and our Meijer, Target and local grocery store all carry them) and the flavors are perfect for this recipe.
That being said, if you can't get those, there are a ton of great chicken sausages out in the world that would work well for this recipe. Some things you should think about when choosing one:
- Look for sausage varieties that won't be fighting the curry and coconut flavors in this dish (you'll want to avoid Italian sausages, sausages that have cheddar cheese, etc..). Apple is a common chicken sausage flavor and works well in this, but there are other options out there too.
- If you are gluten-free and/or dairy-free, make sure your sausage is, too! The Gilbert Aloha Chicken Sausages are both, btw (but if using a different flavor of Gilbert's, be sure to double check)!
- The Aloha sausages have a little heat to them, and if you end up using a different variety, you may want to add a little chili paste to the sauce to balance all of the flavors (I've done this when making this dish with apple sausages).
- If you're doing 21 Day Fix (or following portion fix for other beachbody programs), you'll want to have a serving of sausage that has around 120-150 calories and at least 12 grams of protein.
Can I use other vegetables in this Pineapple Sausage Curry?
Absolutely! This is such a great "clean out your fridge" dish! Just keep in mind that if you are using something like carrots (which will take significantly longer to cook than peppers, onions, etc), you'll want to put them in the pan to soften first before you add the quicker-cooking vegetables.
Some veggies I like to add to this are:
- carrots (grating some is also a great option for quicker cooking!)
- spinach
- broccoli
- butternut squash
- cauliflower (the LBD of vegetables)
Is fresh or canned pineapple best for this recipe?
Using fresh is best for this flavor-wise, but I've also made this dish a gazillion times with canned pineapple tidbits in juice and have loved it every time. I love that I always have canned pineapple and chicken sausages on hand, so I can make this any time I want.
What should I serve this dish with?
Honestly, most of the time (especially if I'm making this for myself) I just eat it on its own because I'm lazy and it's truly delicious all by its lonesome. However, it's also great with brown rice, cauliflower rice or even quinoa!

How to make Easy Pineapple Sausage Curry:
Spray a large (this is a 12") non-stick pan with olive oil cooking spray. Heat to medium and saute those veggies! Once they've softened to your liking, push them to the outer edges of the pan and put your sliced sausages in the middle, letting them brown.
While they're cooking (you can also do this beforehand if you prefer), mix together your cornstarch with some coconut milk and set aside. Give your sausages a flip so the second side can also brown.
Stir in your raw sugar, curry powder, and pineapple. Let cook for another minute or two.
Stir in your coconut milk, then your cornstarch-coconut milk mixture. Let come to a bubble to heat through and thicken.
Enjoy all by itself, or serve over cauliflower rice, brown rice, or quinoa!

Easy Pineapple Sausage Curry
This flavorful Pineapple Sausage Curry is gluten-free, dairy-free, and comes together in a flash!
Ingredients
- 6 cups veggies, sliced (I like a mix of peppers, onions and zucchini, but use what you've got!*)
- 4 chicken sausages (I use Gilbert's Aloha Chicken Sausages [they're GF, btw], but other flavors/varieties can be used, just be sure they're gluten-free if you are!**), sliced
- 2 cups chopped fresh pineapple (or one 20-oz can pineapple tidbits in juice, drained)
- 1 â…“ cup full fat coconut milk
- 1 teaspoon cornstarch
- 4 teaspoon sugar
- 3 ½ teaspoon curry powder (I tested this with Nature's Promise Organic curry powder, this amount may need adjusted a bit depending on brand - maybe start with 2 ½ - 3 teaspoon and add more to taste if needed)
- As much cilantro as you like, chopped (optional garnish)
Instructions
- In a small bowl, whisk the cornstarch with a little of your coconut milk until it's lump-free and smooth. I don't measure this and you don't need to, but it's probably around a tablespoon to give you an idea. Set aside.
- Spray your largest non-stick saute pan with olive oil cooking spray and heat to medium heat.
- Add the vegetables to the pan and cook, stirring occasionally until softened. I like to leave a little crispness to my veggies for this, but if you prefer them fully cooked through, then go for it!
- Push the veggies to the outside of the pan and put the sliced sausages in the middle, cook until browned, flip them over then cook until the second side has also browned.
- Add the pineapple, sugar, and curry powder to the pan, stir, then cook for another minute or so to let everything come together.
- Stir in the coconut milk. Give the cornstarch mixture another mix if it's started to separate, then whisk that into the pan. Let come to a bubble, stirring continuously until thickened.
- Eat as is or serve it with either some brown rice or cauliflower rice, both delish!. Garnish with some cilantro if ya like and enjoy!
Notes
*Definitely feel free to use other veggies that you have on hand for this (I love this as a clean-out-the-fridge meal!), just keep in mind different cooking times. Carrots, for instance, will have a longer cooking time than the veggies I used, so you'll want to cook and soften those in the pan first before adding the quicker-cooking veggies.
**If you use a different brand of chicken sausage, you'll want them to have at least 12 grams of protein to count as a red if you're doing 21 Day Fix.
Also, the Gilbert's Aloha Chicken Sausages that I used have a little bit of heat to them, so if you use a different variety that doesn't, you may want to add a little chili paste, cayenne or sriracha to balance this dish 🙂
*** If you decide to make one serving of this for yourself, the cornstarch isn't needed, the little bit of coconut milk will cook down and thicken by itself pretty quickly.
