Anyway, for now, let's talk about this Cauliflower Fiesta Rice Breakfast bowl!
You guys. I legit ate this for breakfast every day for probably 4 months. It's so flavorful and EASY!
And I don't know about you, but even before I started doing 21 Day Fix, I was always trying to work more veggies into my day and it can be tough! Then once I started doing 21 Day Fix, and needed to get 4 cups of veggies in each day, I realized pretty quickly that if I didn't start early with at least a serving, I would struggle to get them all in.
And speaking from experience, nobody but nobody wants to be forcing veggies on themselves at 9 pm.
Let me tell you what I love about this healthy breakfast meal prep recipe:
- It's made for meal prep, so you can make it ahead and be set for the next several days.
- I get OVER a full green of veggies first thing in the morning! And I'm freaking thrilled about it!
- It's super customizable - don't want to use any carbs at breakfast because you've planned to have them later in the day? Leave out the corn and beans and you'll still have a crazy-delish, low-carb breakfast (I do that all the time!). Don't like roasted red peppers? Just use an extra cup of cauliflower rice instead, no big deal! Can't take the heat? Leave out the chipotle puree. You'll still get a ton of flavor from the spices (and you can always use more of those if you want)!
- You can change it up a little each day - different cheeses, different salsas, avocado, no avocado...
- It's actually SUPER quick to make! Even when you make your own cauli rice - but you can still use a little help from the store by way of frozen cauliflower rice, or pre-riced raw cauliflower in the produce department.
- Between the heat from the chipotle puree, the sweet from the corn, those flavorful spices... it's seriously a flavor bomb! And then...
- I get to top it with runny eggs. Sigh. Runny eggs = happiness.
Ok, let's get to some Q&A and then I'll show you how easy it is to make it!
What is meal prep?
Meal prep is really anything that you prepare ahead of time to make cooking and meals easier on yourself for later! Some people fully make all of their meals and snacks for the week on a Sunday, but you can even just prep one or two things (like breakfast and lunch) and that can make a huge impact on the ease of your week! That's what I usually do 🙂

Can meal prep help with weight loss?
Absolutely! For one, if you're meal prepping dinners (or even just some ingredients, like chopping veggies ahead), that can save you from going out to eat or ordering takeout and that alone is HUGE, not to mention a great money saver.
Plus, if you pair meal-prepping with portion control (like the 21 Day Fix plan, Weight Watchers or even counting calories if you’re so inclined) it can really be a game-changer. It’s a super helpful tool to keep you away from the grub you know in your heart you should be avoiding (I’m looking at you, random bowl of not-exactly-Fix-approved cereal).
And in the case of a breakfast like this, I know that if I don't prep some veggies ahead for my breakfast, I'll end up filling my morning with carbs like toast or cereal, and I'd much rather have something later in the day that truly makes me happy, like pasta or wine. 🙂

What is chipotle puree?
Chipotle puree is just the entire contents of a can of chipotle in adobo pureed in a food processor or blender. That's it! It's smokey and spicy and adds so much to a dish.
The leftovers will last a good three months in the fridge, but you can also freeze them in a freezer bag!
If you do decide to freeze them, no need to thaw before using, you can just cut off the amount you need and throw it right in the pan you're cooking in! Be warned though - a little goes a long way 🙂

What is cauliflower rice?
Cauliflower rice is literally just raw cauliflower that's been chopped into teeny tiny pieces resembling rice. Does it taste/feel like rice? Not exactly, but it's pretty darn close. Plus it's still super delicious and a blank slate, just like regular rice, but way lower in carbs.
Here's a thought for the day:
Anytime a veggie is masquerading as a carb, it helps to try not to think of it as being that thing - zoodles and spaghetti squash aren't pasta, but that doesn't make them any less delicious. Sometimes we just need to appreciate veggies for who they truly are.
How do you make cauliflower rice?
The easiest way is to use a food processor that has a grating/shredding disc (the kind you'd use for carrots). It's super quick, too!
Can you make cauliflower rice without a food processor?
Yep! You can use a box grater instead (on the large-holed, carrot side), just watch your fingers!
Can you buy cauliflower rice already made?
Absolutely! You can buy it frozen in the freezer aisle (just make sure there's no added salt - the ingredient list should only say "cauliflower") and many stores also carry it raw and pre-riced in the produce area! Either one of those could be used for this recipe.
Btw, if you're using the frozen kind, I wouldn't even bother thawing it, you can just throw it in the pan frozen and it'll thaw and cook super quickly!
Can this 21 Day Fix breakfast meal prep recipe be frozen?
You can definitely make the cauliflower rice ahead! Though I'd recommend cooking your eggs fresh 🙂

- Avocado
- Cheese! Cheddar is my favorite here, but pepperjack is also yum!
- Salsa - I love switching up the salsa that I use in it for a different flavor!
- Cilantro - don't @ me, haters. 😉
- And of course 2 eggs, however ya like 'em! Personally I feel like the runny eggs are where it's at, but you do you!
Ok, let's make it!
First, heat a large non-stick skillet over medium heat and add the oil.
Then add the chipotle puree to make a smokey chili oil.
Add the raw cauliflower rice to the pan...
Then the spices. Stir together and let cook until the cauliflower gets to your desired doneness.
Add the roasted red bell peppers...
Then the beans and corn...
Stir together and heat through.
You can either serve immediately or divide the mixture between four meal prep containers for later! And then of course when you eat it, top it with a couple of eggs and all of your favorite fixin's!

Cauliflower Fiesta Rice Breakfast Bowl {Healthy Breakfast Meal Prep}
I love getting veggies in early in the day with this easy Cauliflower Fiesta Rice Breakfast Bowl meal prep!
Ingredients
- 2 teaspoon olive oil*
- 2 teaspoon chipotle puree (or more, to taste) - this is just a can of chipotle in adobo, blended in a food processor until smooth!
- 4 cups raw cauliflower rice
- ½ teaspoon salt
- 1 teaspoon cumin
- 1 ½ teaspoon chili powder (may want to start with a little less depending on your chili powder, they're all a bit different!)
- 1 cup jarred roasted red bell peppers in water, patted dry and chopped
- ½ cup frozen roasted corn, thawed (or just regular frozen sweet corn, thawed)
- ½ cup black beans (no salt added or low-sodium if you can find them), drained and rinsed
- 8 eggs
Optional Toppings:
- cheese (I love cheddar, but pepper jack is great, too!)
- avocado
- no-sugar-added salsa
- cilantro
Instructions
- In a large saute pan, heat the oil and chipotle puree to medium heat. Add the cauliflower rice, salt, cumin and chili powder, stirring until cooked to desired doneness. I like it to be softened, but not completely soft.
- Add in the peppers, corn, and beans and heat through.
- When you're ready to serve, top your serving with desired toppings and a couple of eggs made however you like 'em!
Notes
*If you're doing 21 Day Fix and want to save your teaspoons, you can skip the oil here and use a quick spray of olive oil cooking spray instead!
21 Day Fix Container Counts per Serving: 1 ¼ Green, 1 Red, ½ Yellow, ½ teaspoon (be sure to count however much blue you use if you top your bowl with cheese and/or avocado!)
