These Banana Pudding Dessert Waffles are a sweet treat perfect for Mother's Day brunch or anytime you want an extra special breakfast (or dessert)! 21 Day Fix and Weight Watchers friendly, too!
Hey guys! Can you believe Mother's Day is one week away?! I've been so busy trying to get summer stuff ready for the blog before our big move that it definitely snuck up on me!
Fortunately, I've at least been thinking ahead for it recipe-wise because YOU GUYS. I have got you with these Banana Pudding Dessert Waffles!
They are not only crazy-delicious, but you can (and totally should!) also make them ahead PLUS they'd work beautifully as a treat that you can drop off ahead to your mama if you can't be with her that morning!
The make-up of this fun breakfast (or brunch, or dessert!) is a perfectly crispy vanilla waffle on the bottom to give you that crispy vanilla goodness that you would normally get from the Nilla Wafers, then sliced bananas, then a yum vanilla pudding topping, and then it's all topped off with a little extra plain whipped topping for good measure. They're sooooo good!!
We're completely obsessed with these over here and I hope you guys (and maybe your mamas!) like them just as much!
What is Banana Pudding Dessert?
Banana Pudding Dessert is a dessert that is often made as a trifle, but sometimes also in a 9X13 baking dish. It has a vanilla pudding mixture that usually includes instant pudding mix, sweetened condensed milk, cream cheese and Cool Whip, layered with sliced bananas, Nilla Wafers, and more Cool Whip.
Are Banana Pudding Dessert Waffles healthy?
Yes! I've lightened up this dessert for a more breakfast-friendly version using crispy vanilla whole wheat waffles, fresh bananas, a super yum vanilla pudding topping and some Cocowhip!
They're also 21 Day Fix and Weight Watchers friendly!
What is Cocowhip?
So Delicious Cocowhip is a dairy-free alternative to Cool Whip and is found in the freezer aisle. My store has a separate freezer aisle in the organic/health food section and that's where they keep it!

Does Cocowhip taste like coconut?
It does, but only slightly!
How do you count Cocowhip for 21 Day Fix?
Based on the ingredients and the nutritional information, I'm counting each tablespoon of Cocowhip as ¼ oil teaspoon and ¼ sweetener teaspoon. 🙂
This Container Guide makes it super easy to figure things like this out! (Sweetener info isn't in the guide, but 4 grams of sugar = 1 teaspoon of sugar, fyi!)
What can I substitute for Cocowhip in these healthy Banana Dessert Waffles?
Refrigerate two cans of coconut milk overnight. Using a hand mixer, whip all of the coconut cream (this is the thick part of your canned coconut milk - reserve the liquid to add to smoothies!) with 2 Tbs plus 1 teaspoon of sugar until creamy and sugar has dissolved. I actually LOVE the taste of it this way, it's just a little less light and fluffy 🙂
This will change your 21 DF counts to 1 Purple, 1 Yellow, ⅔ Blue, 1 ½ teaspoon and 2 sweetener teaspoons
Can these 21 Day Fix Banana Pudding Dessert Waffles be made ahead?
Yes - in fact, I prefer to make them that way!
You have to make the pudding ahead no matter what so it sets, so I usually will do this the day before, but you can do it a few days before if that works better for you.
The waffles can be refrigerated or frozen and I have instructions in the recipe card on how to reheat them to keep them nice and crispy! Then on the day of, all you have to do is mix the topping ingredients together, slice the bananas and reheat the waffles - it literally takes minutes!
How to make Banana Pudding Dessert Waffles:

Give the prepared vanilla pudding a good whisk until smooth. Then gently whisk in 1 cup of the Cocowhip and set aside.
For each serving, slice ½ of a banana over one crispy vanilla waffle...
then pour the vanilla pudding topping over that...
Add the extra Cocowhip on top and enjoy!

Banana Pudding Dessert Waffles
These Banana Pudding Dessert Waffles are such an easy, special breakfast that can be made ahead! Perfect for a holiday breakfast, Mother's Day brunch or really any day!
Ingredients
- 2 cups vanilla pudding (see recipe card below, must prepare in advance so it can set)
- 8 whole wheat waffles (see recipe card below, can make ahead if you like!)
- 1 ¾ cups frozen So Delicious Cocowhip, thawed and divided - *see note for substitution
- **optional ingredient, see note: 6 Laughing Cow lite cheese wedges (plus 1 ½ Tbs almond milk)
- 4 ripe bananas
Instructions
- After removing the plastic wrap from the top of your prepared and set pudding, give it a good whisk until completely smooth.
- Gently whisk 1 cup of the Cocowhip into the vanilla pudding for your topping.
- To serve, on top of each waffle, slice ½ of a banana, top with ⅓ of the pudding mixture, and then top with an extra 1 ½ Tablespoons of the Cocowhip. Enjoy!
Notes
*Cocowhip substitution: Refrigerate two cans of coconut milk overnight. **I also tested adding some laughing cow lite cheese wedges to the pudding mixture to make it closer to the original banana pudding dessert, but my family preferred it without. However, if you wanted to give it a go, you'll want to blend 6 wedges with 1 ½ Tbs milk until completely smooth (DO NOT PUT THE PUDDING WITH IT IN THE BLENDER), then whisk it into the pudding, then add the Cocowhip.

Dairy-Free Vanilla Pudding Recipe {21 Day Fix | Weight Watchers}
This Dairy-Free Vanilla Pudding is quick and easy to make, plus it's a great base recipe for so many different flavors! Perfect for cooking with kids, too.
Ingredients
- 2 egg yolks
- 2 ½ Tbs cornstarch
- 1 ¾ cups unsweetened almond milk (plain or vanilla)
- 1/16 teaspoon salt
- 2 ½ Tbs sugar (white or raw)*
- 2 teaspoon vanilla extract
- 1 Tbs refined coconut oil (if you aren’t dairy-free, you can also use butter)
Instructions
- In a medium pot (with the heat off) whisk together the yolks, cornstarch, and a splash of the milk (just a few tablespoons, but I don't measure this) from your 1 ¾ cups until smooth (if you put all of the milk in at once the cornstarch will clump up). Then whisk in the salt, sugar, vanilla and remaining almond milk.
- Put your burner on medium heat and bring the mixture to a bubble, stirring, and cook until thickened. Turn off the heat and whisk in the coconut oil.
- Immediately divide the mixture (about ½ cup each) between 4 small bowls or ramekins and refrigerate (or you can be like me and just eat it warm!) for at least 2 hours to chill and set. If you don’t want the “skin” to form on your pudding, be sure when you cover your puddings with plastic wrap, that you press the plastic wrap gently onto the top of the pudding so no air can get to it. Enjoy!
Notes
*you can substitute maple syrup or honey, but those will change the flavor of the pudding if you were looking for a straight vanilla flavor – though honey or maple-flavored puddings are also delish, so feel free to switch it up!

One-Bowl Whole Wheat Waffles
These one-bowl whole wheat waffles are quick and easy to put together and make the most delicious weekend breakfast (or even make ahead and pop it in the toaster on a weekday)! Also great for a holiday breakfast or brunch!
Ingredients
- 2 eggs
- ½ Tbs pure maple syrup
- 1 Tbs pure vanilla extract
- 3 Tbs plain Greek yogurt (2%)
- 1 ¾ cup unsweetened almond milk (plain or vanilla)
- 1 Tbs baking powder
- ½ teaspoon salt
- 3 Tbs butter, melted
- 2 cups whole wheat pastry flour (or regular whole wheat flour)
Instructions
- In a large mixing bowl, whisk together the first seven ingredients (through salt). Slowly pour the melted butter into the bowl while whisking continuously. Once the butter is fully combined into the mixture, whisk in the flour, until just combined (taking care not to over mix).
- Cook in a waffle maker according to your waffle maker’s instructions until light brown and crispy. I like to put the finished waffles in a 200° oven while I'm cooking the rest of them to keep them warm and crispy! As each waffle maker will hold a different amount of batter, you may need to do a little math here (if you have any questions feel free to contact me!), ½ cup of batter is one serving. (btw, the waffle maker that I linked to below is the perfect size because each well holds ½ cup of batter AND it’s the perfect size to fit into a toaster!)
